02 - Combine chocolate and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until completely melted and smooth. Alternatively, use a double boiler over simmering water.
03 - Hold each Peep by its base or use a fork to submerge into the melted chocolate. Rotate to coat all sides evenly, allowing excess chocolate to drip back into the bowl.
04 - Place coated Peeps on the prepared baking sheet. Immediately sprinkle with decorations while chocolate remains wet for optimal adhesion.
05 - Refrigerate the baking sheet for at least 20 minutes until chocolate coating becomes completely firm to the touch.
06 - Remove from refrigerator and serve chilled or allow to come to room temperature before serving.
