01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil.
02 - In a large bowl, combine olive oil, honey, melted butter, salt, pepper, and thyme. Whisk until smooth.
03 - Add the carrots to the bowl and toss to coat evenly with the glaze.
04 - Spread the carrots in a single layer on the prepared baking sheet.
05 - Roast for 25 to 30 minutes, stirring once halfway through, until the carrots are tender and caramelized at the edges.
06 - Transfer to a serving platter. Garnish with fresh parsley if desired. Serve warm.
