01 - Preheat oven to 400°F.
02 - Slice chicken breasts horizontally to create 6 small fillets.
03 - In a bowl, whisk together maple syrup, Dijon mustard, soy sauce, olive oil, smoked paprika, pepper, and salt.
04 - Add chicken fillets to the marinade. Let sit for 10 minutes.
05 - In a skillet over medium heat, cook bacon until crispy. Drain on paper towels.
06 - Remove chicken from marinade (reserve marinade); grill or pan-sear each fillet 3-4 minutes per side. When cooked through, set aside.
07 - Pour remaining marinade into the pan. Simmer 2-3 minutes until slightly thickened. Brush over cooked chicken.
08 - Optionally, place a slice of cheddar on each piece of chicken and broil for 1 minute until melted.
09 - Brush buns lightly with butter. Toast cut sides in a skillet until golden.
10 - Spread a thin layer of mayonnaise on bottom buns. Layer with arugula, glazed chicken, bacon, onion, and top bun.
