01 - Toss chicken cubes with vegetable oil, salt, and black pepper in a large bowl until evenly coated.
02 - Whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and sesame seeds in a separate bowl until fully combined.
03 - Add zucchini, bell pepper, onion, mushrooms, and broccoli to the seasoned chicken. Pour half the hibachi sauce over the mixture and toss thoroughly to coat all pieces.
04 - Preheat air fryer to 400°F for 3 minutes.
05 - Spread chicken and vegetables in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
06 - Cook for 10-12 minutes, shaking the basket halfway through cooking time. Continue until chicken reaches internal temperature of 165°F and vegetables are crisp-tender.
